Its processing method is as follows. 1. Raw material processing Before boiling, the raw shrimp must be sorted by quality and size. For shrimp mixed with sand and dirt, it must be washed clean in clean water, removing shrimp, small fish, and other important things. In order to prevent the skin from sticking, shrimp should be soaked with cold water (preferably ice water) for about 20 minutes before cooking. 2, boiled clean drinking water to cook, water and raw materials weight ratio of 4:1. Add 5%-6% salt by weight of water. Boil the salt water first, then put the raw shrimp into the pot. Each pot of shrimp boiled for about 6 minutes. During the cooking process, shrimps should be used to stir the shrimp in the same direction along the edges of the pot and remove the floating foam on the surface of the water. Remove the shrimp from the water. For example, the shrimp shell will soon turn white, indicating that it has been thoroughly cooked and can be removed immediately. Add a proper amount of salt to each pot to maintain the concentration of salt water. After cooking about 5 pots, the salt water has become cloudy and the water needs to be changed in time. 3, dry shrimp drying methods are dried or dried two. Cook the cooked shrimp into the basket, drain the water and let out the sun. In case of rainy weather, they should be air-dried indoors and not stacked so as not to overheat and deteriorate the quality of the shrimp. When it is out of the sun, spread the shrimp on the straw mat or bamboo curtain, and turn it properly to make it dry quickly and evenly. Under conditions, the cooked shrimps can be evenly distributed on the drying bamboo curtain after being cooled, and dried in the drying tunnel. The drying tunnel temperature should be maintained at 70-75 degrees Celsius for 2-3 hours. 4, shelling shrimp shelling machine can be used for shelling, can also be manually peeled off. The peeled shrimp rice has bright color, individual integrity, and high yield. A small amount of dried shrimp shelling can also be used to put the shrimp into the sack, and the two hand-held sacks are beaten on the concrete floor or the stone board to take off the shrimp shell. 5. Packing Shrimp after shelling are sifted, graded, and graded according to shrimp size and appearance quality. It can be packaged in small plastic bags, generally 500 grams or 1000 grams per bag, and finally loaded into large cartons.
