Food adulteration refers to the act of intentionally altering or tampering with food products to deceive consumers, often for economic gain. There are various methods used in this process, which can be categorized as follows:

(1) Blending: This method involves mixing a certain amount of similar-looking substances into the original food ingredients to reduce costs or alter the product's characteristics. It is commonly applied to liquid foods. Examples include mixing sesame oil with rice water, vinegar with free mineral acid, beer or liquor with water, and milk with added water.

(2) Contamination: This occurs when non-identical but visually similar substances are mixed into solid foods, or lower-quality versions of the same type of food are combined. For instance, flour may be mixed with stone powder, or low-quality flour may be blended with high-quality flour. Other examples include mixing MSG with salt or glutinous rice flour with regular rice flour.

(3) Extraction: This technique involves removing certain nutrients from a food product and then reusing the remaining material as if it were the original product. For example, after extracting gluten from wheat flour, the leftover material might be sold as wheat flour or mixed back into normal flour. Similarly, fat extracted from milk can result in powdered milk being marketed as whole milk powder.

(4) Counterfeiting: This involves imitating the appearance of genuine food products by using attractive packaging, misleading labels, or false descriptions about the product’s quality, type, or nutritional content. Common examples include fake milk powder, counterfeit earthworm powder, imitation sesame oil, and false wheat milk essence.

(5) Whitewashing: This refers to the practice of improving the appearance or flavor of low-quality or nutrient-deficient food using artificial additives such as dyes, spices, or sweeteners. The goal is to mask the poor quality of the product. For example, cakes may be colored with non-food dyes, or pastries made from expired or damaged goods may be crushed and reprocessed. Rancid noodles, broken pieces, or scraps might be soaked, crushed, and mixed with fresh ingredients to create new noodles for sale.

These practices not only pose serious health risks but also violate consumer trust. Awareness and strict regulation are essential to prevent such fraudulent activities in the food industry.
