Cherry dry processing technology

To prepare high-quality dried cherries, start by selecting the right raw materials. Choose cherry varieties that have bright skin, small and short pits, uniform size, a sweet flavor, and minimal juice. Remove any moldy or unripe fruits, as well as the stems. Place the cherries in a basket and wash them thoroughly under running water in a sink or basin, repeating this process 2 to 3 times to ensure all impurities are removed. Next, perform an alkali leaching treatment to speed up the drying process. Soak the cherries in a solution of 0.2% to 0.3% boiling lye for a short period, then rinse them thoroughly with clean water to remove all traces of the lye. After rinsing, drain the cherries by placing them in a basket for 5 to 10 minutes to reduce excess moisture. For sulfur fumigation, place the cherries on a baking tray and transfer them to a sulfur chamber. Add sulfur powder along with wood chips to aid in the fumigation process. Once the sulfur is ignited, close the chamber door and let it smoke for approximately one hour. Typically, about 2 to 3 kilograms of sulfur powder is used per ton of fruit. After fumigation, spread the cherries evenly on a baking tray and move them to the drying room. Start the drying process at around 60°C. Once the cherries are slightly dry, increase the temperature to 75°C to 80°C. Dry for 8 to 12 hours, then remove and inspect the fruit. Any under-dried cherries should be placed on another tray for further drying. If the weather is favorable, you can also sun-dry the cherries during the day. To achieve even moisture distribution and a soft texture, transfer the dried cherries into a wooden box and allow them to rest for 2 to 3 days. This softening process helps improve the overall quality and consistency of the final product. Finally, grade the cherries according to quality standards. Grade 1 cherries should have dark red stems, while Grade 2 cherries may have a mix of dark red and light red stems. Pack the cherries into cartons based on their grade before shipping or storage. This careful process ensures that only the highest quality dried cherries reach the market.
