How the emulsifier works

The purpose of the dispersion is to achieve uniform arrangement and fine distribution of the particles of the respective phases in the continuous phase. In order to achieve dispersion of mutually incompatible phases, it is necessary to strongly pulverize and mix the particles. Crushing means that the resistance to surface tension must be overcome to form a new surface. The dispersion process delivers the energy needed and ensures that the two phases are homogeneously mixed. The long-term stability of dispersion is affected by the exact particle size distribution and the use of emulsifiers and stabilizers.

Homogenization: The process of mixing different materials to obtain a homogeneous mixture. Homogenization is mainly applied to components that are immiscible with little or no miscibility, and solids can usually be homogenized by stirring.

Emulsification: A process in which it is difficult to mix two or more phases of a liquid. The main purpose of emulsification is to disperse the discontinuous phase into the smaller droplets.

The emulsifier and the stator of the emulsifier in the equipment are used for emulsification, and the combination of strong agitation, homogenizer, shear force, homogenizer to generate linear jet impact force, centrifugal force, and sound waves generated by the rotating stator makes the droplets Become tiny. During this process, the large turbulence created by the agitation allows the rotor and stator arrangement to help deliver the emulsifier molecules to the reformed surface quickly. An emulsifier is generally added during emulsification, the emulsion is usually stabilized with an emulsifier such as a surfactant, and the emulsifier is mixed into one of the two phases between emulsifications. The emulsifier is partially hydrophilic and partially lipophilic. One side of the emulsifier molecule binds to water and the other side binds to the oil. The emulsifier produces stable droplets that hinder the separation of the emulsion.
