Jiang Knife, when will it become the pride of Jingjiang?

Saury and Jingjiang have a heavenly gift. Every year when squid comes on the market, almost every diners will think of Jingjiang. The most delicious Jiangdao knife is produced in Jingjiang, and the richest swordfish feast comes from Jingjiang chef's skillful hand. However, Jiang knife resources are in short supply in recent years. This year, the highest price of Jingjiang Jiangdao sold a price of 5600 yuan per catty, and the mouthwatering swordfish feast has gradually become a memory. Is this quiet Jingjiang specialty? Can Jiangdao re-enter the public's dinner table?

Phenomenon: The resource advantage no longer exists Since about 2000, saury production has plummeted. Many people in Jingjiang have discovered that saury, which can be tasted every spring, has suddenly become more and more “luxury”. The high price of saury is mainly due to the fact that the number of wild saury in the Yangtze River has become increasingly scarce. In 2002, the Ministry of Agriculture of the People’s Republic of China issued the “Changjiang Fishing Ban”. However, what makes people wrestle with is that although the “limitation of arrest” has exceeded one year in one year, the fact that Jiangdao has become scarce has become an undoubted fact.

Under the ban on fishing, why is the Yangtze River Sword dead? In this regard, Gu Shuxin, head of the Municipal Fishery Administration Station, explained that the Yangtze River banned fishery actually only solved the problem of the swordfish entering the river. Swordfish have to go to the Yangtze River to hold a “collective wedding ceremony” at the beginning of each spring. After a long journey, only a handful of swordfish have survived hardships to breed. From August to September each year, the larvae of saury fish begin to swim to the sea, but during this time the Yangtze River has stopped fishing. The young saury pass through the waters along the banks of the river and the slow water flow. At this time, fishermen from all provinces along the river used to insert nets in Jiangzhong, and only the fingertips of the swordfish touched the net and died. The swordfish that can be bred into the sea for fattening are rare.

In addition to large-scale fishing, another important reason for the reduction in the number of Jiangdao is the increasing environmental pollution. Gu Shuxin worriedly said: “To control the water pollution of the Yangtze River and to protect the ecological environment, we need multi-sectoral and multi-sectoral linkages. If pollution control can no longer keep up, saury can persist for several years?” He believes that Jingjiang has become a big swordfish industry. It is necessary to make full use of this resource advantage to explore the path of swordfish culture.

Exploring: A long road to large-scale knife-raising The Yangtze River puffer fish breeding, which is also listed in the "Three Yangtzes of the Yangtze River," has been successfully used for more than 10 years. The biggest difference between puffer fish and saury is that its effluent still survives.

Solving the death of saury is the first step in artificial breeding. Jingjiang is at the forefront of solving this problem.

In 2004, Gu Shuxin and some aquatic technicians were pleased to discover that the saury larvae on fishing have survived for more than 10 hours after simple treatment! Since then, fisheries experts in Jingjiang have had the idea of catching and artificially raising saury. However, in order to form a scale, problems such as fishing nets, fishing methods, transportation and holdings should also be solved.

After years of exploration, Jingjiang's unique capture technology has enabled the surviving rate of larvae of swordfish to reach over 95%, which is second to none in the country. In 2008, the first batch of more than 5,000 saury fish was shipped to Mazhou Island for testing. At the same time, Hainan, Zhangjiagang, Jiangyin, Changzhou and other places also began to initiate saury culture experiments. In 2010, the city set up four artificial saury breeding sites in Shimbashi, Gushan, and Mazhou Island. All the saury seedlings are provided free of charge by the Fishery Station.

“Artificial cultured swordfish is an important means to change the endangered status of swordfish. However, there are many specialities in the artificial propagation of swordfish. It is a worldwide problem. The scale of cultured swordfish is still a long way to go.” Gu Shuxin’s speech is full of frustration and heavy.

Bottleneck: seeking technology and financial support As the Jingjiang people are still waiting for the timing of the saury breeding test, Haian, Jiangyin and other places have continuously issued information on artificial knife raising. The reporter learned from the “Jiangyin Daily” that last year, the Shengang Sanyin Breeding Base in Jiangyin City used the self-proliferation of 30,000 saury fish fry to achieve large-scale farming.

At the beginning of 2010, the staff of the Fishery Station of the Municipal Agriculture Committee came to the side of the Ma Dao Island swordfish culture pool and found that the saury that was raised two years ago was hard to find. It is understood that most of these swordfish were killed and wounded during the transfer, and some saury were caught by waterfowl. Jingjiang started raising artificial knives earlier, but the development momentum is obviously insufficient. What are the reasons? Gu Shuxin said that at present, the funds for the artificial knife raising experiment in Jingjiang mainly come from the support of three scientific and technological funds, and less funds have restricted the development of the knife raising experiment. Jingjiang has established a national-level Yangtze River Resources Reserve Management Committee. If we build a research platform and break through the breeding and breeding problems of saury breeding, the swordfish culture in Jingjiang can be scaled up.

The reporter learned that the Municipal Commission of Agriculture is planning to establish the first swordfish culture association in the country and use the role of the association to develop a group of farmers, form a one-stop service for catching, breeding and sales, and promote the development of swordfish culture technology.

Looking forward: Let the swordfish feast return to the dinner table. “In my hometown of Jingjiang, Jiangsu, when the spring water is plumped up, the swordfish feast will flourish. It's tempting.” Many of Jingjiang’s wanderers were so impressed. The swordfish feast is a reminder for the Jingjiang wandering in the field. For the celebrities in Jingjiang's dining industry, there is also a bit of extra care.

"Before the first half of the month, there have been saury. Now it is only about mid-March. Swordfish on the market is not only expensive, but also less. Swordfish feast is becoming more and more difficult to do." Chen Shirong, a prominent figure in the dining industry in Jingjiang Deeply touched.

As early as the 70s and 80s of the last century, Chen Shirong began to make saury feasts. He was often asked to go home to make a saury feast. Prepare 8 to 10 pounds of saury, an old hen, 5 pounds bamboo shoots, 2 pounds of shrimp, you can make a table full of swordfish feast. Chen Shirong recalled that because of the rich raw materials, at the end of the 1980s, during the Ching Ming Festival, many guests from Shanghai, Suzhou, and Wuxi visited the Jingjiang River to taste the swordfish feast. Nowadays, it is regrettable that the swordfish feast has gradually faded out of the market.
